Versatile Verjuice

Published: 02 Aug 11

VERSATILE VERJUICE

Made from the juice of unripe grapes harvested in mid-summer, verjuice is soft and full-flavoured and lends gentle acidity. Used in the foods of grape-growing regions in Europe and the Middle East since the 14th century, it was revived in the 1980s in Australia's Barossa Valley.

It can be used in so many different ways - in salad dressing with olive, nut or seed oil; to add flavour to basting juices in a roast; for deglazing, roasting, frying and marinating meat, poultry or fish before a braai; in stir-fries or reduction sauces; dripped onto oysters; and for poaching fruits.

Add a generous splash to soda and ice for a refreshing drink! It contains no alcohol, artificial colourants or MSG.

Made by Michael Olivier, it is available from Wild Peacock in Stellenbosch for R40 and Pete Goffe-Wood's Kitchen Cowboys at the Neighbourgoods market.
