Unpolluted high-altitude air and Little Karoo temperatures impressed Spanish jamon producers sufficiently to partner with businessman Jason Lucas in the boutique production of cured hams in Prince Albert.

Here hams from fig- and acorn-fed pigs are now cured in temperature-controlled rooms for at least eight months. Despite price tags starting at R2 500 per ham (a seven-year-matured goes for R10 000!), Lucas isn't struggling to find willing restaurant and foodie buyers.
