onewaterfront has been through several prestigious chefs in the past few years. Recently appointed executive chef Phil Alcock (ex Manolo and the Showroom) takes over from Craig Paterson (who took over from Bruce Robertson) and much is expected of the new regime. It is too early to tell what Alcock will do but Paterson’s reign has been characterised by modern classics and an emphasis on updated versions of Cape Malay dishes. Current menu items such as coriander-crusted kingklip are a piquant pleasure. The bobotie is aromatic with saffron and almonds. In addition to the local touches there have tended to be quietly elegant Mediterranean classics and Asian elements in dishes such as the delicious honey and soy-marinated quail. Good news is that pastry chef Vasti Wilson is staying – she brings trans-Atlantic fun to the menu with kiddie classics such as ‘cookies and milk’ and a ‘peanut butter and jelly sandwich’. Such is the state of flux at this very fine restaurant that a Top 100 place has been withheld, but with Alcock’s talent it’s bound to be back at the top by next year.
