Prue Leith graduate chef Chantel Dartnall Füss honed her skills working with Michelin-starred culinary supremo Nico Ladenis in London and Pretoria icon-chefs Daniel Leusch of La Madeleine and Rachel Botes at Carlton Delicious. She now runs the kitchen at her family’s five-star country hotel. Opulence is the order of the day in terms of both food and décor. Oxtail tortellini are drizzled with star anise jus. Tender, pink duck breast slivers are interlaced with foie gras and figs. It would be kind to say that the waiters need more training and banquet tables pose huge barriers for ‘reach-over-the-table’ service,
