Chef Sven Niederbremer was trained by German culinary legend chef Bernard Stumpf and has worked at four Michelin-starred restaurants (Reads, Es Mole den Bou, El Oliva and Chopin). He came to South Africa to be the executive chef at The Westcliff Hotel and is now in the process of opening at The Monarch, Rosebank (scheduled to open in January 2008). Preview menus show dishes such as salade Pierre Maurice (a mélange of lobster, truffle, foie gras, celeriac and artichoke), chicken breast with snow crab risotto and pumpkin soup with Parmesan cream. Given the ingredients, it is no surprise that the menu won’t be cheap. Niederbremer says that he lives by the motto of Eckhart Witsigman, who believed that: “When money is no object, truly inspired dining is possible.” Can’t wait! WATCH THIS SPACE FOR MORE INFORMATION
