Mag-nificent Lowveld escape

Casterbridge Hollow, situated 20km from Nelspruit and 40km from Hazyview and Sabie, has recently opened Magnolia restaurant, overseen by head chef Jamie Watt, ex of Paranga in Camps Bay. The new venture is described as "rustic and elegant with a European twist", with a diverse menu also covering all bases.

" Dear Annemie
First of all, I would like to apologize on behalf of the restaurant for your appalling experience - as our goal is SET - to be recognized as one of the preferred havens for ‘foodies” in South Africa.
I would also like to thank you for taking the time in posting your comment. Every comment we view as constructive, we always digest in a positive manner in order to develop ourselves and enhance our skills.
In reply to your mash, we do apologise for this order. Our mash is not pre-flavoured, it is done on order and no other dishes on our menu is served with rosemary mash, we are extremely puzzled by this (not questioning your comment) and have implemented an investigation, in order to ensure this does not occur again.
With regards to the scallops: We order all our seafood fresh, unfortunately due to our location our selection is limited to what our suppliers have in stock. We are currently evaluating all fresh produce suppliers, thank you for brining this to our attention.
We are proud to say that all our initial chefs are still in our kitchen and still attain the same passion as day one. Our staff spirit is very high at Magnolia and we are all committed to our goal.
If I could ask you: Did you air your concerns with the floor manager during your dining experience, as complaints such as, lack of knowledge and slow service is taken extremely seriously and dealt with immediately?
We truly strive for every patron to have a memorable experience and believe that we do manage to produce such results favourably.
I would be grateful if I could get in contact with your, to discuss this in person?

" We are foodies and spent the weekend in White River to try out some restaurants. We were SO dissapointed with Magnolia!! Despite the menu that seemed very promising, the service and food were appalling! The waiter had no idea what the items on the menu were, the "truffle" mash turned out to be plain mash with rosemary, the prawns were tough and overcooked, the scallops microsopic small, the risotto undercooked. Altogether it was nothing more than a bad Spur experience. A perfect example of a good menu from a chef who was once in the kitchen, but dissappeared and the remainding kitchen staff has no feeling or taste for good food. "
