For the last 31 years, this Johannesburg eatery has been defined by the cuisine of talented and irrepressible Austrian, Walter Ulz (a former classmate of Spago luminary Wolfgang Puck). His zeal recharged by recent co-ownership, Ulz spins ingredients from all four points of the compass with classical mastery, flamboyant plating and ach-so-civilised Viennese flair. Signature dishes include Peruvian seafood ceviche, African crocodile in mango curry cream, Vietnamese scallop soup with fried seaweed, chèvre-filled beetroots on sage polenta with truffled parmesan cream, topped with a langoustine tail. This universal embrace, coupled with a knack for aptly-timed retro revivals (from roulades and strudels to chateaubriand and crêpes suzette) is the key to Linger Longer’s enduring appeal. A congruent and solid front-of-house combines to create a sense of occasion, in a suite of gracious Georgian rooms and a sunny glass gazebo set in the chef’s herb garden.
