Restaurant,
boutique hotel and über-talented chef Margot Janse have been recognised
worldwide as being at the top in their class (Tatler's World's Best Small Hotel
2004, Restaurant magazine's World's 50 Best Restaurants, 2002, 2005), and it's
easy to see why.
Nothing is ever too much trouble, and details like a DVD library and hot water
bottles in your bed on cold nights make this a luxury home from home indeed.
But the reason so many people flock from far and wide to the picturesque village
of Franschhoek is for a taste of Janse's sublime food. This unassuming and approachable
chef knows no limits in pushing the boundaries of food marriages.
The à la carte menu is divided into five "sections" from which
diners may opt for four or six courses. Start with the likes of wild mushroom
spätzle with poached egg and truffle froth, or perhaps a fragrant asparagus
soup with lime scrambled quails egg on a silky asparagus flan. Things to come
include a perfectly formed miniature fillet of kingklip with a nettle and wild
herb blini on a peppery celeriac remoulade, or Rooibos-soaked impala loin with
a chocolate and Marsala jus on an absolutely more-ish bacon and pea risotto.
Expect rarities like calf's cheek on a rocket potato puree, served with a black
pepper and olive jus, and try to leave space for a cheese or dessert course.
Service is exceptional, with staff patiently explaining each of the complex
dishes, and there's somebody on hand to talk you through wine suggestions for
both the à la carte and the eight-course degustation menu. On this note,
the degustation menu is superbly paired with some wine gems.
With this kind of expertise and devotion to superlative dining, Le Quar-tier's
respect from the international and local community is truly well deserved.
