There was an intake of breath from discerning local and international diners when top chef Franck Dangereux left La Colombe. Brit Luke Dale-Roberts made a quiet, early-2007 arrival and has got the foodies whispering and quivering with excitement again. The seasonal menu is still chalked in French and translated at the table. Franck’s classic French style dipping into Provence is still in evidence. New are the subtle Eastern hints. Dale-Roberts recently spent six years opening innovative hotel restaurants in Asia (he worked for the Shunju Group in Tokyo and launched Shune in Korea), and he has a talent for successful cross-cultural culinary marriages. The kudu tartare with sesame oil, honey and soy-laced sauce is simultaneously creamy, vibrant, salty and sweet. The shredded fish served with contrasting velvety foams, caramelised leeks and bursting fruity tomatoes is a sensation. Dessert sees seasonal fruits poached in jasmine tea. Big shoes to fill but initial impressions suggest that they have been filled.
