Making your own mayonnaise at home is well worth the effort. The biggest ingredient is a decent amount of elbow grease and upper-arm resilience, but the€benefi ts are palate-fold. Keep it simple, and the general rule appears to advocate avoiding the use of olive oil. Inspired by the additional flavour of Pomegranate Vinegar and Parmesaninfused oil, try this out. The easiest way of course is to mix all the ingredients together with an electric mixer!

2 whole eggs
pinch of salt
5ml lime juice
1 tsp water
200ml canola oil
100 ml Parmesan oil
