You will be excused for being confused when listening to co-proprietor Shaun Smith's list of dishes offered at Durban restaurant Fusion Café. Dishwasher fillet, ox-tail heated to perfection in an electric blanket, ice-cream prepared at the table with the help of liquid nitrogen... It is all part of the molecular cooking that forms the backbone to the venture's global cuisine. And although it might take some getting your head around, "It is quite the rage," says Smith, and the fillet does come out of the washer "gorgeously tender"...

Smith and co-proprietor Caryn England are of the Fusion Cookery School - and also chose the venue for sentimental purposes. England started out here when it was AKA restaurant - a big name in its day - and it seemed an appropriate return to her roots.
