Creative Cuisine Pantry’s red wine reduction

Published: 19 Jun 11

FROM TO DRAB TO FAB

Red wine reduction is a versatile sauce usually made by sautéing vegetables, adding wine and stock and then leaving the liquid to boil until reduced to a thick, nearly sticky syrup. It’s a fabulous addition to your pantry since it can be added to stews and trickled over anything from a fillet to a perfectly ripened Camembert or even over ice cream. It’s also great for decorating the plate and a quick drizzle can transform an ordinary plate of food into something that looks almost cordon bleu.

If you don’t have the time to slave over the stove, invest in a bottle of Creative Cuisine Pantry’s red wine reduction. It retails for roughly R35 for 125ml. Go to www.creativecuisine.co.za for stockists.
