Comfort Food

Make the dish featured on the cover:
Filled Pasta With Bolognese Sauce
Serves 4 – 6Ingredients:
1kg mince
15ml olive oil
2 medium onions, finely chopped
1 t g
 
arlic paste
4 cups carrot, peeled and grated
1 cup celery, finely sliced
3kg tomatoes, skinned and chopped
2 cups beef stock
2 T granulated sugar
2 T fresh, finely chopped basil
2 T fresh rosemary, finely chopped
Salt and black pepper, to taste


To serve:
Filled pasta of your choice
Fresh basil, to garnish

Method:
Heat a large, heavy-based saucepan with the oil. Fry the onions until tender, add the garlic and cook for a further 3 minutes. Turn the heat up slightly, add the mince, and cook until browned and a crumbly texture. Add the carrot and celery, mix well, then stir in the remaining ingredients. Turn the heat down to low, and simmer for 1½ – 2 hours. Stir occasionally to prevent it from sticking. Season with salt and pepper and serve over filled pasta pockets.
