About the different categories:
Though Natural Sweet, Noble Late Harvest and Vin de Paille (Straw Wine) are all styles of sweet wine, their respective methods of production differ significantly.
Natural Sweet is the vaguest category, with the only requirement for wines to be classified as such being that they possess a minimum residual sugar level of 30g/l. This makes the category something of a catch-all, allowing for easy-drinking wines of no great complexity through to wines of real profundity.
What gives Noble Late Harvest wines their hallmark of complexity is ‘noble rot' - the fungal growth Botrytis cinerea, which concentrates acid and sugar in grapes while also increasing the viscosity (due to the production of glycerol) and altering the aromas and flavours of the finished wine.
Finally, there is Vin de Paille, which should be made from naturally desiccated grapes, either dried on straw mats or allowed to shrivel on the vine (minimum sugar being 30g/l).
Key findings: A tasting of South Africa's sweet wines usually yields quite a number of high ratings, but when the WINE magazine panel convened recently to judge a line-up of what's currently on the market, including eight Natural Sweets, 31 Noble Late Harvests and eight Straw Wines, results were middling. The feeling about wines in the Natural Sweet sub-group was that too few showed any real distinction.
Typically winemakers are working with grapes that have raisined on the vine but have not benefited from the ennobling effects of botrytis and so the challenge becomes how to move beyond wines that are overtly sweet and syrup-like to something with real complexity.
Regarding Noble Late Harvest wines in particular, there appear to be more and more wines made in a modern, light and elegant style rather than the traditionally rich and full. Here, the panel was of the opinion that while the pursuit of more finesse is no bad thing, this should never become an excuse for a lack of complexity.
Botrytis is the key to complexity and yet too many wines showed insufficient botrytis character. If this is because weather conditions in recent vintages have simply not been conducive to the development of noble rot, then so be it.
On the other hand, there was a suspicion that wines appeared one-dimensional on account of winemakers lacking the nerve to leave the crop in the vineyard long enough for botrytis to develop fully. The longer picking is delayed, the greater the chance of losing the crop entirely to grey rot, but Noble Late Harvest wines are surely not about playing it safe!
Straw Wines typically don't lack for richness but these often came across as simple, sugary and excessively oxidative, which is to say lacking in freshness.
