This morning's launch of Pol Roger's new zero-dosage Champagne called Pure took place, appropriately enough, at Pure, the fine dining restaurant at Hout Bay Manor hotel in Cape Town. No dosage means a residual sugar of 0.95g/l compared to 12g/l on the Brut Réserve - crisp, to say the least. A couple of glasses of this with some oysters and I was well set for meetings with WINE magazine senior management later in the day...
Pure as the driven snow.
