Chef Emmanuel Guillet is one of the most underrated culinary artists in the Cape. Trained at the Michelin-starred Le Corsair in Brittany, his classic French lineage is evident from the rabbit-stuffed choux pastry through the Champagne-marinated oysters and on into the silken crème brûlée. He is often dismissed as old-school stodgy because his décor is the style equivalent of a full frontal lobotomy at the hands of an outmoded surgeon – but look past the Makro-style twinkly lights and you will find food at least as creative as that made by the self-consciously funky boys working in trendier suburbs. The duck confit crumble with vanilla and tobacco sauce is hip and fabulous, and the trou normand Calvados sorbet is the best palate cleanser in town. Witty, innovative, delicious and disgracefully under-recognised.
