Auberge Michel’s sleekly uncluttered, modern styling and fashionably restrained culinary philosophy are perfectly pitched at Johannesburg’s moneyed dining cognoscenti. The quality of fresh and imported ingredients is irreproachable, with nary a day off for cuisine’s Holy Trinity (truffles, foie gras, lobster). Confits and fondants underscore chef Frédéric Leloup’s classic training, although he is not averse to challenging sensitive palates with avant-garde combinations such as chocolate foie gras brûlée and prawn-stuffed quails. This well-executed, self-contained formula aimed at consistent proficiency, is a refreshing contrast to so many restaurants that over-ambitiously aim at magic that they can only delver erratically. If there is a criticism of what is a truly marvellous restaurant, it is that while the skill levels are unsurpassed, the passion is sometimes missing. Mechanical professionalism rather than culinary magic are the order of the day.
